Ricotta Omelet

Serves 4

Use greased 2 quart casserole dish, deep
6 eggs, well beaten
1 cup ricotta cheese
1/2 cup mozzarella, cut up

In a large bowl, beat eggs. Add cheese and salt and pepper to taste. Put in deep casserole dish and bake until firm, 1/2 hour at 350 degrees.
